Sally’s favorite Raclette combination  
Pork Tenderloin, cut in thin strips, (you can marinate
the pork strips a day ahead in ½ oil, ½ soy sauce,
paprika powder)     
Boiled potatoes, sliced
Emmentaler cheese, sliced  
Tomatoes, sliced
Cook the pork and potato slices on the grill top, when
brown, put them in the pan, add a slice of tomato, and
cover with cheese. Put under the heating element until
melted. Enjoy with fresh ground pepper.

Jimmy’s favorite Raclette combination – “Hawaii”  

Cooked ham, deli sliced
Pineapple slices from a can
Cheese, any kind
Put a slice of ham in the pan, add a slice of pineapple,
cover with cheese. Put under the heating element until
melted. If you have to, eat some baguette bread with it.

Tucker’s favorite Raclette combination –
“Raclette Pizza”  

French bread, thin sliced  
Pizza sauce
Salami or pepperoni
Cheese, any kind
Put a piece of bread in the pan, spread pizza sauce
evenly, add salami or pepperoni slices, and cover with
cheese. Put under the heating element until melted.
Enjoy your very own pizza.

For this recipe with an American Twist you need:

Sliced artisan bread
Hamburger patties
Onion slices
Garlic slices
Cheese slices (e.g. Emmentaler)

Grill the artisan bread and set it aside, then grill the
hamburgers, onions and garlic slices on top to the grill.
Melt cheese in the raclette dishes, combine!

Authentic Raclette
1 kg Raclette potatoes (small, even-sized potatoes)
800 g Raclette cheese in slices
Usual trimmings:

•Gherkins
•Silverskin onions
•Mixed pickles
•Freshly milled pepper
•Paprika
Preparing and serving Raclette: Boil the potatoes in
their jackets. Line a basket or bowl with a napkin and
wrap the hot potatoes in it to keep them warm. Cut the
Raclette cheese into pan-sized slices and set them out
on a dish. Put bowls of trimmings, a pepper mill and
paprika on the table.

Party

When you're looking for a dinner party idea that is as
easy as fondue, but slightly different, try hosting a
raclette (Table Grillin') party. Meats  & cheese is
prepared with vegetables on a special raclette grill.
The grill heats numerous small pans in which each
guest melts the cheese with meats & vegetables and
other toppings of his or her choice. All the host needs
to do is supply the equipment and prepped meat,
cheese and vegetables. A nice Green Salad on the
side. Then everyone can relax with a beverage of
choice while their individual Raclette pans cook. It
couldn't get any easier!
Raclette can be prepared with any variety of
vegetables, fruits, herbs, condiments, liqueurs and
spices. Let your imagination go wild.

Party Grillin' (Reclette) Party Tips

If you only have a small dining table and need more place for the reclette grill and all the other ingredients, you can try elevating the
raclette grill onto a mini table to enable you to use the area underneath your raclette grill. Or get a smaller raclette grill such as our
model .
If you are organising a large group function and need helping hands or need to cut costs, you can ask guests to bring one/some of
the accompanying ingredients e.g.. a jar of olives, capsicums, can of pineapple or wine. As there is no precooking required, this
wouldn't be too much trouble to ask anyone.
To ensure everyone gets their fair share of all ingredients, you can choose to allocate a plate with a selection of all the ingredients
to each person or to share between two. This also makes all the ingredients at only arms length away and reduces the need to
pass various dishes around the table.
For those who are lactose intolerant or can't eat cheese because of dietary restrictions there is what's known as non dairy cheese
on the market based on soy beans - it's called "mini col" available from your supermarket. So you don't have to miss out if this
applies to you.
There are plenty of other great cheeses available at your supermarket suitable for cooking:e.g. Swiss Gold , Gruyere , Emmental ,
Jarlsberg , Mozzarella , Mature Cheddar.
The top hot plate of your grill can be used for meat, sausages and vegetables.
Any leftovers from your dinner can be easily be used for pizza topping or adding to pasta sauce the next day. Pre-made bases from
the supermarket make for a quick and easy snack.
The Ingredients to make your Party a Success
Cheese
For a raclette dinner, plan on 7–8 oz of cheese per person.
Cheese is an important ingredient in Table Grillin', We'll introduce you to the types of cheese used in the recipes.
Vegetables
Tender vegetables can be raw when cooked on the raclette grill, as long as they're cut up into small enough pieces. For firmer
vegetables, blanch them briefly until al dente.
Fruit
Cheese and fruit are a classic combination, especially fruit that's slightly tart like those used in gratins and cheese desserts. Ideal
fruits include apples, pears, plums, apricots, figs, mango, and papaya.
Meat
Meat prepared on a raclette machine should be cut up very finely so it will be cooked throughout in a short period of time.
Marinating it beforehand makes it especially tender.
Fish
Fish is ideal for raclette because it cooks quickly. When grilling, it's better to use fattier types such as grouper, salmon, catfish, or
filets with the skin on. Scallops and peeled shrimp are also delicious on the grill.
Potatoes
Small new potatoes boiled in their skins are the traditional accompaniment to raclette. Plan on about a half of a pound per person if
the potatoes are the only filling side dish. Wrap the potatoes in a damp cloth and place them in a bowl next to the raclette machine.
Side Dishes
Fresh salads are excellent accompaniments to raclette dishes. Sauces and dips are suggested if you're using a grill.
Seasonings
Always set salt, freshly ground black pepper, and perhaps paprika on the table for the potatoes. Grilled foods should be seasoned
only after cooking. Be sure to scrape off marinades thoroughly before cooking, otherwise the seasonings will burn.
The main attraction at a raclette party is the variety of ingredients and individual dishes that each guest can prepare in his or her
own cooking dish. This also makes raclette an ideal meal for children because they can select the foods they like best. Not to
mention, children love to take part in the actual cooking. But make sure an adult sits next to each child, both to help and to keep an
eye on the hot utensils.

For a raclette dinner party, table decorations should be kept to a minimum. The table will already be full with buffet plates, the
appliance itself, and the different bowls of ingredients. You also have to be able to pass the ingredients around and set them down
again. So pay attention to selecting the right utensils rather than to fancy decorations. Have fun cooking with your friends!

Planning Tips
1.Timing
As experienced cooks know, the most important thing is to begin your preparations far enough ahead, especially if you want to
throw a larger raclette party without getting too stressed.
2.Equipment
Theoretically, a raclette machine with 8 dishes is adequate for 8 guests, but then you have to plan on the meal taking a relatively
long time since each guest has access to only 1 dish. As an alternative, you might want to consider borrowing a second raclette
machine or buying a second set of raclette dishes.
3.Raclette Recipes
For 8 people, plan on using 2–3 recipes, plus a sufficient quantity of potatoes, another filling side dish, and 2 salads.
4.Thirst Quenchers
Keep in mind that you can never have too much water. Water is the best thing for quenching thirst. If that's too boring, mix sparkling
water with a little of your favorite fruit juice. If serving sparkling water, count on at least 1 bottle per person.
The type of drinks you provide (in addition to a sufficient amount of water) mainly depend on the preferences of your guests. As a
general rule, beer goes best with hearty raclette dishes and wine goes best with more sophisticated, finely seasoned dishes.

Cherry Tomatoes and Mozzarella

■1 small basket cherry tomatoes
■3.5 oz fresh mozzarella
■3 bacon slices
■1 bunch fresh basil, stems removed, chopped
■1 cup pre-made croutons
Halve tomatoes and place in bowl. Slice mozzarella
and sprinkle cut sides of cheese with basil. Place on
serving plate. Finely chop bacon and place in small
bowl. Place croutons in another bowl. In a raclette
pan, place a few tomato halves and croutons; top
with a slice or two of mozzarella and bacon pieces.
Heat under grill until cheese is melted and bacon is
crispy. Makes 6 servings.

Party Grillin'  is an efficient and fun way to prepare simple but hearty food right at the table. It's a popular French

Party Grillin’ is a great way of having a nice dinner with family and friends. Now you can have this nice dinner with a little help.
Each person prepares his or her own meat chicken, beef, pork, little burgers & vegetables!  Meat is always cut in smaller pieces, in
order for it to fit in the small pans. Dinner will not be complete without a dose of salad to balance up. You serve the meat on large
trays for the table, small bowls for the various vegetables, bread and garlic butter and so on!

What to cook:
Bite size pieces of your favorite meats and fish: Small Hamburgers, Peeled Shrimp, Scallops, Veal, Pork,  Beef Tenderloin &
Chicken  
Vegetables:  Green peppers and/or onions, potatoes, yellow squash You could even prepare eggs if you like
Fry in butter, margarine or olive oil.

Have as a side dish some of your favorite salads, fresh bread and your favorite cheeses and raw vegetables.
